i use itunes for my encoding
ez & swift
you first enter the preferences pulldown menu where you can alter the import settings
mp3, wav, ... plus their sub devisions.
+ you have this nice "library" on the left when you can collect your fe. albums, dubplates, previews, collections, ...
comes with a fast disk burner option
when writing a disk or playing your albums you can enhange your sound and/or level your volume with the soundcheck function.
oppinions may differ but to me it's the best i've worked with.
oh i like the ez working audiograbber aswell but itunes is the most prominent atm.
for my own tunes i export the wavs, master them and write a mp3 in the chosen bitrate to disk in wavelab 5 with the "lame" encoder.

there is a program called goldwave...which is a wav editor...i use that...you just save any type of file as an mp3...and you can even change the quality and bitrate etc...has some pretty cool tools in it too...i use it sometimes for smaller files...like samples to mess with how they sound...definitely isn`t soundforge or anything rivaling that...but it still comes in handy...
