I'm living in an apartment at my university now so I have to learn how to cook more than instant noodles. Anyone have some good, easy recipes they'd like to share? The only restriction for me personally is that I'm a vegetarian.

This is what I cooked tonight, it was pretty good too!

Ligurian Minestrone Soup (6 servings)

2 teaspoon olive oil

1 large onion, finely chopped

1 large clove garlic, finely chopped

1 medium carrot, finely chopped

1 rib celery, trimmed and finely chopped

1 medium size potato, peeled and diced (red potatoes may be smaller, so use two)

1 medium size zucchini, diced

1 cup canned chopped tomatoes with juice

4 cups veg broth or water

¼ cup short pasta, such as tubetti or ditalini

5 oz. chopped spinach (look for washed already. You will need to coarsely chop this up, which means the pieces can be left large)

½ cup chopped basil or tablespoon of dried basil

Salt and pepper

2 tablespoon parmesan cheese

1. Heat oil in 4-quart pot over medium-high heat.
2. Add the onion, garlic, carrot, and celery and cook until they begin to soften, 2 to 3 minutes.
3. Add the potato and stir well to combine.
4. Stir in the tomatoes and broth, turn the heat to high and bring to a boil.
5. Reduce the heat to medium-low, partially cover the pot, and simmer, stirring occasionally for 30 minutes.
6. Add the pasta and cook, stirring frequently to prevent the pasta from sticking to the bottom, until the pasta is tender, about 10 minutes.
7. Add the spinach and basil, stir well to combine, and cook 5 minutes longer.
8. Season with salt and pepper to taste.
9. Serve with cheese, if desired.

ewww recipe thread, how bout......"Guinness Pork Chops in Gravy"

* 8 pork chops (1 inch thick)
* salt & freshly ground black pepper
* all-purpose flour
* 1 tablespoon unsalted butter
* 2 tablespoons vegetable oil
* 3 large onions, thinly sliced
* 3 garlic cloves, minced
* 8 fluid ounces Guinness stout or full-bodied dark beer (about)
* 8 fluid ounces chicken stock (about)
* 1 tablespoon coarse grain mustard (or more)
* 1 tablespoon chopped fresh parsley
* 1 1/2 teaspoons balsamic vinegar (or more)

Directions

1.

Season the pork with salt and pepper.
2.

Dredge them in flour and shake off excess.
3.

Melt the butter with 1 tablespoon oil in heavy large deep skillet over medium-high heat.
4.

Add the pork in batches and brown well, about 6 minutes per side.
5.

Transfer the pork to plate and set aside.
6.

Dredge the onions in flour; shake off excess.
7.

Heat the remaining 1 tablespoon of oil in the same skillet over medium heat.
8.

Add the onions and garlic.
9.

Season with salt.
10.

Cover and cook for 5 minutes, stirring once.
11.

Uncover and cook for 4 more minutes, stirring occasionally.
12.

Add 2 fluid ounces of Guinness 6 fluid ounces of the stock and bring to a boil, scraping up any browned bits.
13.

Return the pork to the skillet.
14.

Spoon some of the onions over the pork.
15.

Add enough additional Guinness and stock to bring liquid halfway up sides of pork.
16.

Cover the skillet with foil, and then the lid.
17.

Reduce the heat and simmer for 20 minutes.
18.

Turn the pork over and cook until very tender, about 25 more minutes.
19.

Transfer the pork and onions to a platter using a slotted spoon.
20.

Degrease the pan juices.
21.

Boil the juices until thickened slightly, about 10 minutes.
22.

Whisk in 1 tablespoon of mustard.
23.

Add chopped parsley and 1½ teaspoons of balsamic vinegar.
24.

Taste and add more mustard or vinegar if desired.
25.

Pour the gravy over the pork.
26.

Garnish with parsley and serve.


I just copied and pasted this recipe cause I didnt feel like typing mine(my moms) out (we use 2 inchers and we make the gravy different) but this is the general recipe of delicious! Drummer


@ minas my sis is vegan and she has an excellent recipe for nut loaf, i'll ask her what it is and hook it up for ya... I find vegetarian food to be bland and tastless but this was quite the dish and quick and easy, also seafood stuffed portabelos are quite good....im getting super hungry in this thread I gotz to go
