Quite a bit really.
you get proper stereo imaging.
they generally have a flatter response
and you get a better bass responce.
when you get to hear your stuff through a great set of monitors you'll know why they normally cost a lot 
My friend bought some mackie hr824s and i thought my mixes were all right but they showed up lots of little mistakes and inaccuracies in the my mix.
Bassically the better the monitor the more detailed the sound. And if you get your mixes to sound great on the quality pair of monitors they are more likely to sound great elsewhere.
